How can we create healthy, affordable food options for the poor in the US?

With so many health problems in our nation directly related to food intake, how can we reform the food system to deliver healthy, convenient, affordable food to the underpriviledged? And how can we do it without a heavy government hand, but rather through presenting food that is simply preferential? I believe a degree of policy and education in the areas where dietary improvements are needed most would be necessary, at least in the beginning. I'm thinking: in addition to the McDonald's, Burger Kings, KFCs, Taco Bells, etc that generally provide the meals for individuals and families with less money to spend on food, a healthy version of all these  types of restuarants.  Grocery store food options may change, as well, but I believe that the "quick and easy" food options that are so appealing to poor neighborhoods, single moms, families with 4+ children, and more is an effective place to begin to address our nation's dietary crisis.

We can and do.

But the first step was to improve information and education to the individual. And as with too many "right" ideas this was missed or not emphasized.

Unfortunately, for several decades now this exchange of information is heavily influenced and sometimes controlled by the food conglomerates and their lobbyists. Effecting supply and demand, i.e. prices and availability.

Education; without "self-serving business" controls. is the ultimate answer.

won't solve it but it will help. start with the schools take out the junk food vending machines provide it with healthy options. secondly change the cafeteria from frozen re-heated crap with made from scratch healthy dishes. this isn't some idea where it sounds good but could not possibly be effective. i live in British Columbia, Canada where at my school this has already happened the vending machines are all healthy the cafe is a scratch kitchen and to help make it affordable the students run the kitchen (and is a great opportunity for anyone hoping to pursue a career in the restaurant businesses) this won't solve the problem and will cost the government some money but being able to give children at least one good healthy meal can make all the difference.
