How can we create healthy, affordable food options for the poor in the US?

We can and do.

But the first step was to improve information and education to the individual. And as with too many "right" ideas this was missed or not emphasized.

Unfortunately, for several decades now this exchange of information is heavily influenced and sometimes controlled by the food conglomerates and their lobbyists. Effecting supply and demand, i.e. prices and availability.

Education; without "self-serving business" controls. is the ultimate answer.
