Its certainly not a purely western idea. I'm a vegetarian and much of my diet ends up being fresh veggies, rice tofu, etc. Certain cuisines like Indian already cater to this very well. I think we are one of the first cultures to do it for the animal rights purpose. But many cuisines feature vegetarian options for health and price. Places where meat is expensive
